3/4 cup Shortening
3/4 Cup Sugar
1 egg
1 tsp. Vanilla
1 Cup carrots --cooked & mashed or shredded &
cooked in microwave
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 cup nuts
FROSTING:
Grated orange rind and juice of orange. Add powdered sugar...Frost cookies while hot!!

Directions:
Cream together shortening & sugar. Add egg, vanilla and cooked carrots and mix well. Sift flour, baking powder, salt together and add to rest of mixture. Stir in nuts. Bake 12 min at 350 degrees. DON'T OVER-BAKE!!!
