5 pounds potatoes
mayonnaise
sweet pickles, chopped
1 medium onion, chopped
4 boiled eggs
salt

Directions:
Directions:
Cook potatoes in peelings. Cool. Peel and chop. Place in large bowl. Add in chopped sweet pickles, onions, and eggs. Combine all ingredients with mayonnaise. Add salt to taste. Refrigerate.

Sometimes I refrigerate the potatoes overnight before I peel the potatoes. Kendra and Annie's Illinois Grandmother always had a big bowl of potato salad made when we came to visit her. When we lived in Southern Illinois we would call her before we left and her refrigerator would always be full by the time we drove the 6 hours it took to get to Peoria. Potato salad was one of her favorite things to make and one of their father's favorite things to eat.
