Microwave Coconut Pie Recipe

2 1/2 cups milk
3 egg yolks
1 cup sugar
1/3 cup cornstarch
1 tsp. vanilla
2 tsp. butter
Coconut to your taste



Meringue:
3 egg whites
Pinch of salt
1/3 tsp. cream of tartar (not mandatory)
Approximately 2 tbsp. of sugar per egg white

Directions:
Directions:
Put milk, egg yolks, sugar and cornstarch in a large glass mixing bowl and stir with a wire whisk. Put bowl in microwave at high power for 2 minutes. Stir with wire whisk. Put back in microwave 2 minutes. Stir again. Do this for a total of 8 minutes cooking time in the microwave. Remove from the microwave and add: vanilla, butter and coconut. Cool and pour into cooked pie crust. Top with meringue.

Meringue:
Put all ingredients in a mixing bowl and add the sugar slowly while beating. When stiff peaks form, put on top of pie filling, and sprinkle with coconut. Brown in oven at 350 for about 10 minutes.

**For a chocolate pie: add 2 squares of unsweetened chocolate or 6 tbsp. cocoa and 2 tbsp. oil to the milk, yolk, sugar and cornstarch, then cook for the 8 minutes.
You can use this to make a pudding too. Cut the cooking time slightly.
