2 Tbsp. butter
1 medium onion, thinly sliced
1 (8 oz) package sliced fresh mushrooms
1 pt. whipping cream
4 oz. crumled Gorgonzola cheese

Directions:
Directions:
Melt butter in skillet over medium-high heat and cook onion until tender.
Add mushrooms and cook 5 minutes. Reduce heat to medium and cook an additional 5 minutes.
Bring whipping cream to a boil over medium heat. Reduce heat to low and simmer until thickened (about 15 minutes).
Whisk crumbled cheese into whipping cream and cook until cheese is melted. Stir in onion mixture.
Serve over grilled beef fillets.
