4 c chopped apples
1 c white sugar
1 c brown sugar
2 c all-purpose flour
2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cardamom
1/2 tsp ground allspice
1 tsp salt
1/2 c vegetable oil
2 eggs - beaten
2 tsp vanilla extract
1 c chopped walnuts

Directions:
Directions:
Preheat oven to 350. Grease and flour a 9x13 inch pan. In a medium bowl, stir together the sugar and apples, set aside. Sift together the flour, baking soda, cinnamon and salt. In a large bowl, stir together the oil, eggs and vanilla. Add the apples and sugar, mix well. Stir in the dry ingredients, then the nuts. Pour into the prepared pan and spread evenly. Bake for 45 minutes, or until cake springs back to the touch.

This recipe makes 6 mini loaf cakes. They turn out very moist and delicious, and they freeze well.
