"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Caramel Corn - Arnhold Family, by Cassie Keller, is from Eating Under a Tree,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1/4 cup Karo syrup 1/4 cup butter 1/4 tsp. cream of tarter 1 cup light brown sugar 1/2 tsp. baking soda
Combine Karo syrup, butter, cream of tarter and brown sugar in sauce pan and bring to a boil over medium heat, stir constantly.
Boil until sugar has dissolved. Add baking soda and stir continuously. It will bubble quickly, start to puff and turn light brown.
Pour over a large bowl of popcorn and stir.
This is a delicious caramel corn recipe from the Arnhold's. I like to double the caramel for an extra delicious treat. I have fond memories of making & eating this with Aimee - one of my oldest and greatest friends!
