1 lb ground beef salt & pepper to taste 1/2 c rice 2 potatoes - sliced thin 1 onion - sliced thin 1 bell pepper - diced 1 small can diced tomatoes 1 can cream of mushroom soup
Brown ground beef in a skillet with seasonings. Spoon into a greased casserole. Layer rice, potatoes, onion, pepper, and tomatoes over the ground beef. Spread soup over everything, then cover and bake for 1 - 1/2 hours - or until vegetables are done.
