10 -12 chicken pieces
Seasoned flour
2 T. (+) olive oil
1 1/2 c. flour
1 tsp. salt
1 tsp. baking powder
4 eggs, lightly beaten
1 1/2 c. milk
3 T. melted butter or butter substitute
At least 1/2 lb mushrooms, sliced

Directions:
Directions:
Coat chicken with seasoned flour and brown in (olive) oil. Sauté mushroom slices. Sift together 1 1/2 cups flour, salt, and baking powder. Combine eggs, milk, and 3tablespoons of melted butter, then stir these into flour mixture until blended. Add sautéed mushrooms to batter. Pour the batter into a large, buttered, shallow baking dish and lay the chicken pieces on top, leaving room in between for the batter to rise around each chicken piece.

This is like chicken with Yorkshire pudding all around it -- very tasty, though not exactly low calorie.
