Line foil muffin cups with a vanilla wafer. Beat cream cheese and chocolate to combine; add the rest-just to combine--do not over beat! Spoon into muffin cups, bake @ 350 for 20 min. Cool for 5 min. Personal Notes:
I made these for Katie's baby shower and they seemed to be a huge hit and have been gaining popularity ever since--their next showing was Annie's bridal shower where they were equally well recieved!! VARIATION: Cherry Mini Cheese Cakes- 12 vanilla wafers, 1 egg, 8 oz. cream cheese, 1/2 c. sugar, and cherry pie filling. Follow Auntie Sher's directions, (I bake for 12-15 min.) Chill, then top with pie filling. These are very popular with my kids.
