2 T. olive oil
8 oz. chicken breast (skinned and boned)
1/4 c. finely diced onion
2 garlic cloves or minced garlic
1/2 tsp. garlic salt
1 T. cumin
1/2 tsp. chili powder
1/8 tsp. red pepper
1 can chicken broth
1 can kernel corn
1 can black beans (washed and drained)
1 can Mexican style stewed tomatoes
3 corn tortillas cut into strips
2 T. cilantro
sour cream
fresh cilantro

Directions:
Directions:
Heat oven to 450. Heat oil in pot over medium heat. Cook chicken in pot, stir in onion and spices. Cook and stir for 2 minutes. Stir in broth and veggies, then bring to a boil. Spread tortilla strips on a baking sheet and cook for 5 minutes.

When serving soup, place in each bowl a dab of sour cream and fresh cilantro, eat and enjoy!!!
