1 1/2 c. instant rice, uncooked
1 1/2 c. hot water
1 tbsp. taco seasoning
4 small, boneless chicken breast halves
1 bell pepper, cut into strips
1 onion, sliced into thin rings
1 c. salsa
4 - 18"x12" sheets of foil

Directions:
Directions:
Heat oven to 400. Fold up all sides of each sheet of foil to form a one inch rim around edge; coat with cooking spray.

Combine rice, water, and taco seasoning; spoon evenly onto centers of foil. Top evenly with remaining ingredients beginning with chicken breasts.

Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place packets on baking sheet and bake for 45 minutes.

Serve with tortillas, guacamole, sour cream and cheese.
