1 bag (16 ounces) frozen shredded hash brown potatoes
12 eggs
½ teaspoon salt
½ teaspoon pepper
2 cups shredded cheddar cheese
¼ cup chopped onion
¼ cup chopped green pepper
1 ½ pounds sausage, browned and drained or 1 ½ pounds cooked ham
1 cup whipping cream

Spray 9 x 13 inch glass pan with cooking spray, line bottom of pan with hash browns. Break eggs on top of the hash browns, and then gently break the yolks with a fork. Sprinkle eggs with salt and pepper. Sprinkle half of the shredded cheese on eggs. Layer chopped onion, green pepper and sausage on the cheese layer. Pour whipping cream over the layers. Sprinkle remaining cheese over entire casserole. Cover with clear plastic wrap and refrigerate 12-24 hours. Uncover and bake at 350 degrees for 40 minutes. Serves 8-10

This had been a good dish to take to work, when we have morning get together. It also helps fulfills Dee’s assessment that I like cream in everything.
