Chicken pieces to taste
Salt & pepper to taste
1/4 c. apricot jam
1/4 c. packed brown sugar
2 tsp. lemon juice
2 T. butter (or butter substitute)
4 medium sweet potatoes, cooked & peeled

Directions:
Directions:
Place chicken pieces in shallow baking dish & sprinkle with salt & pepper. Spread with preserves, and then sprinkle with brown sugar. Sprinkle with lemon juice & dot with butter (substitute). Cover baking dish tightly (with broil foil is fine) & bake at 400 for 30 minutes. Uncover and add potatoes. Baste everything with drippings from baking dish and bake an additional 30 minutes.
