2 C Peeled and Grated Zucchini
2 C Flour
3 Eggs
1 C Oil
2 C Sugar
1 Tsp Salt
1 Tsp Baking Soda
3 Tsp Cinnamon
1/4 Tsp Baking Powder
1 Tsp Vanilla
1/2 C Nuts (Optional)

Beat eggs until foamy. Add oil, sugar, Zucchini & vanilla. Mix lightly but well. Add remaining ingredients until well blended. Divide batter into 2 well greased loaf pans. Bake at 325 for 1 hour or until it tests done. Remove from loaf pans and cool on rack.
