2 - 3 c cooked meat - whatever you have - hamburger, chicken or pork
1 large onion - diced
2 Tbsp oil or butter
2 cans cream of soup - whatever you have on hand
1 cup sour cream
1/2 c fresh green chili peppers - diced
2 c shredded cheese - divided
tortilla chips

Directions:
Directions:
Crush chips. Stir in soups, sour cream and meat. Saute onion in 2 Tbsp oil. Stir into the meat and chip mixture. Add peppers and 1 cup of cheese. Spray a casserole dish with Pamę. Pour mixture into dish and top with remaining cheese. Bake at 350║ for 30 - 45 minutes.

This recipe is classic 'AUNT LOIS'. We've always joked that she would just clean out her fridge when she made her Mexican casseroles!
