1 1/2 c. quick oatmeal
1 1/4 c. flour
3/4 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1 c. unsweetened applesauce
1/2 c. skim milk
1/2 c. brown sugar
3 TBSP veg. oil
1 egg white
TOPPING
1/4 c. oatmeal
1 TBSP brown sugar
1/8 tsp cinnamon
1 TBSP melted butter

Directions:

Mix together in order given. Top with the topping. Bake in a preheated 375 oven for 15 minutes, or until done.

This makes a dozen good sized, dense muffins. I doubled the topping-- since we all know there can never be enough. The kids gave the golden seal of approval by asking me to make them again.
