8 slices bacon, cut in 1/2-inch pieces
2 c. cubed 1-inch new red potatoes
1 c. (2 medium) chopped onions
1/2 c. chopped green pepper
1/4 c. milk
8 eggs, slightly beaten
1/2 tsp. salt
1/4 tsp. pepper
1 c. (4 oz.) shredded cheddar cheese

In 10-inch skillet cook bacon over medium heat for 5 minutes. Add potatoes; continue cooking, stirring occasionally, until potatoes are browned and crisply tender (12-15 minutes). Add onions and green pepper. Continue cooking until crisply tender (3-4 minutes). Pour off fat. Meanwhile, in small bowl stir together all remaining ingredients except cheese. Pour egg mixture over vegetables; stir to blend. Cook over medium heat, gently lifting portions with spatula so uncooked portion flows underneath, until eggs are set (4-5 minutes). Sprinkle cheese over eggs; let stand until cheese is melted (2-4 minutes).
