1 (10 oz.) pkg. fresh spinach
1 cup strawberries, sliced
1 cup pecan halves, toasted (or I like to use the candied pecans)


Poppy Seed Dressing
1/3 cup cider vinegar or white vinegar
1/3 cup vegetable oil
1/4 cup sugar
1 TBS. Dijon mustard
1 tsp. salt
1/2 tsp. pepper
1 small onion, finely chopped (or put in food processor)
2 tsp. poppy seeds

Directions:
Directions:
For the dressing, combine first 7 ingredients in container of an electric blender; cover and process until smooth, stopping once to scrape down sides. Stir in poppy seeds. Yield: about 1 1/3 cups.

This is a yummy recipe I got from a girlfriend I worked with. Like any good recipe, I think it's fun to think of the nice person who gave me the recipe as I make and enjoy eating it.
