6 medium size potatoes
1 medium onion - finely chopped
1/2 lb fresh mushrooms - sliced
3 Tbsp margarine - divided
1/2 c sour cream
1/4 c bacon bits
1/2 tsp salt
1/2 tsp pepper
1/4 c Parmesan cheese
1/4 c shredded cheddar cheese

Directions:
Peel and cube potatoes. Cook in salted water, then drain and mash. ( Do not add margarine or milk! ) In a skillet saute the onion and mushrooms in 2 Tbsp of margarine until tender. Stir in the mashed potatoes, sour cream, bacon bits, salt and pepper. Spoon into a greased 2 quart baking dish. Sprinkle with cheeses, dot with remaining butter and bake uncovered at 400 for 20 - 25 minutes, or until heated through and golden brown.

You could prepare the day before and refrigerate overnight. Remove from refrigerator 30 minutes before baking.
