1 Pillsbury roll out pie crust
6 medium tomatoes
1 cup basil
1 cup white cheddar, shredded
3/4 cup mozzarella, shredded
1/2 cup chopped onion
1 cup mayonnaise

Directions:
Directions:
Pre-heat oven to 350. Roll out and bake pie crust for 10-15 minutes, and let cool. Blanch tomatoes in boiling water for 3 minutes. Drain and peel. Slice tomatoes and lay on paper towels to draw off excess juice. Then layer tomatoes and basil in the pie crust. Season to taste with salt and pepper. Add another layer. Mix together mayonnaise, cheeses, and onion. Spread over the tomatoes. Bake at 350 for 35 minutes or until browned on top. Let cool for 1 hour.

This is a great way to use up that summer abundance of tomatoes. However, the pie tends to get soggy after a day. So eat up!
