10 lbs. potatoes, peeled and cubed
8 oz. cream cheese, softened
2 c. (16 oz.) sour cream
6 T. butter or margarine, divided
2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Place potatoes in an appropriate sized cooking pot; cover potatoes with water. Cover and bring to a boil. Cook until very tender (could take 35-40 minutes); drain well. Mash potatoes. Add sour cream, cream cheese, 3 T. butter, salt and pepper; beat until fluffy. Transfer to a large crock pot and refrigerate until the day you want to serve the potatoes. On the day you want to serve the potatoes, dot the remaining 3 T. of butter on top of the potatoes and start the crock pot. The potatoes will be very cold so it will take a long time to slowly heat them through.
