Crust
1 cup all-purpose flour
1 tablespoon yellow cornmeal
1/4 cup granulated sugar
1/4 teaspoon salt
1/2 cup cold butter, cut up

Filling
3 eggs
3/4 cup granulated sugar
2 tablespoons all-purpose flour
1/2 teaspoon each - freshly grated lemon and lime rind
2 tablespoons each - fresh lemon and lime juice
1 tablespoon whole milk
1/4 teaspoon salt
1 1/2 cups fresh blueberries
1/4 cup apricot or peach jam, heated

Preheat oven to 375 degrees.
Mix flour, cornmeal, sugar and salt. Cut in butter with a pastry blender until mixture resembles coarse meal. Press mixture onto bottom and an inch up the sides of a buttered 8-inch square glass baking dish. Bake until golden brown, about 15-20 minutes. Remove from oven, but do not cool.

Beat eggs, sugar, flour, rinds, juices, milk and salt. Pour immediately into hot crust; bake until just set, about 18 minutes. Spoon fresh blueberries over top; bake 3 more minutes. Cool on a wire rack. Spoon jam over top. Cover and chill. Cut into squares. Store in refrigerator.

I got this recipe from The Joy of Blueberries by Theresa Millang. 01/17/09 - I made this for Anne and she loved it. It is excellent. You need to watch the crust because it can get too dark.
