1 1/4 cup buttermilk
2 tablespoons soft shortening (or butter)
1 1/4 cup flour
1 teaspoon vanilla
2 teaspoons sugar
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt

Directions:

Beat eggs. Stir in remaining ingredients, and beat with whisk until batter is smooth. Spread on hot griddle and turn over when bubbles appear on top. Serve with butter and syrup.

I have made this recipe and dropped blueberries in batter as it was put on the griddle. Also, I have tried chocolate chips. Experiment with these as you cook. I thought once about drizzling chocolate syrup in the batter just after putting it on the grill. I'll be that's good, too. You can double or triple according to number of people served. I suggest you use an electric mixer if you start doubling.
