4 Baking potatoes, baked and slightly cooled
4 eggs
8 slices turkey bacon cooked and crumbled
1/4 c. green onion, chopped
1/4 c. green pepper, chopped
1 jar (2 oz.) pimiento, drained
1/2 c. reduced-fat cheddar cheese, grated

Directions:
Directions:
Slice potatoes in half, lengthwise. Scoop out center of potato to within 1/2-inch of potato skin. In medium-size bowl, combine eggs, bacon, green onion, green pepper, and pimiento. Spoon turkey mixture evenly into potato shells and sprinkle one tablespoon cheese over each shell. Bake 15-20 minutes at 350.
