cup of butter
cup of sugar
2 eggs
2 cups self-raising flour
A pinch of salt
cup of milk
3 drops of vanilla essence
(for chocolate cupcakes, swap vanilla for two heaped tablespoons of cocoa)

Icing

1 cup of icing sugar,
1 tsp of milk
cup of butter

Directions:
Directions:
Step 1. Cream butter and sugar
Step 2. Add eggs, combine all other ingredients and stir
Step 3. Spoon mixture into 12 hole muffin tray and bake at 180degrees celsius for approx 20 minutes.

To make icing

Combine icing sugar, milk and butter
in a microwave dish and heat on high for one minute. Add a few drops of food colouring. Ice cupcakes and embellish with your favourite lollies.
