1 cup of castor sugar
450g can crushed pineapple
375g packet mixed fruit
1 teasp bicarbonate of soda
1 teasp mixed spice
125g butter
1 cup flour
1 cup self-raising flour
2 eggs, beaten

Combine first six ingredients in a large saucepan,
Bring to the boil, reduce heat, and simmer for 3 minutes. Transfer to a large bowl, allow cooling. Stir flour and eggs into a cooled mixture. Pour into a greased and base lined 20cm deep round cake tin. Bake in an electric oven at 130 degrees C for 2 hours or until cooked when tested.
Allow to cool in tin.
Wrap well to store.
