1 tsp. dried thyme
1/3 c. chopped green onion
1/2 lb. Shiitake mushrooms, stems removed
1-1/2 c. red wine, divided
1 small can low-sodium beef consommé, undiluted
freshly ground pepper
4 filet mignon steaks (4 or 6 oz.)
1 T. low-sodium soy sauce
2 tsp. cornstarch

Directions:
Directions:
Coat a skillet with nonfat cooking spray and heat over medium flame. Add onions and mushrooms, saute for 4 minutes. Add 1 c. wine and 3/4 c. consommé, cook for 5 minutes, stirring frequently. Remove the mushrooms with a slotted spoon, place in a bowl. Increase heat to high; cook wine mixture until reduced to 1/2 c., about 5 minutes. Add reduction to mushrooms; set aside. Wipe pan with a paper towel. Sprinkle steaks with pepper. Coat skillet with nonfat cooking spray. Add steaks; cook 3 min. on each side on high heat. Reduce heat to med.-low; continue to cook until desired doneness is reached. Combine soy sauce and cornstarch. Add 1/2 c. wine and remaining consommé to skillet. Scrape bottom of pan. Bring to boil, cook 1 min. Add everything but steaks. Bring to boil, cook 1 minute, stirring. Serve over steaks.
