1 ½ cups all-purpose flour
2 ½ teaspoons baking powder
¼ teaspoon salt
¾ cup sugar
¼ cup oil
2 eggs beaten
½ cup milk or water
1 pint strawberries sliced and sweetened to taste

Directions:
Directions:
Batter:
Whisk together flour, baking powder, salt and sugar.
Add oil, two eggs and milk (or water)
Pour into an eight or nine inch cake pan

Bake:
Bake in a pre-heated 350-degree oven for 30-45 minutes or until golden brown

Serving:
Remove the cake from the oven and cut it into two-inch squares. Place several of the cake squares into individual serving bowls. Top with sliced strawberries and whipped cream (or Cool Whip). You may pour some milk into the bowl to make the cake more moist.

Alternatives:
•For a more decorative dessert you can cut the cake layer in half or thirds and fill use a filling of Cool Whip and strawberries ending with Cool Whip and Whole strawberries on top

•This recipe can also be used for other berry/fresh fruit shortcakes such as blueberry or peach.

•You can also top it with hot fruit glazes such as apple, blueberry or peach
