5 Potatoes
1/4 cup of olive oil
Salt & pepper to taste
1/2 cup grated Parmesan cheese

Directions:
Directions:
Preheat oven to 400.
Cut potatoes length wise about 1/2' thick.
Boil in salted water until 3/4 the way cooked.
Drain and put in a large bowl, add the olive oil, salt and pepper and gently toss. Layer on a non-stick baking sheet and bake at 400 until lightly brown. Sprinkle with Parmesan and bake for 6-7 minutes more our until cheese is crispy. Remove and let cool for 2-3 minutes before serving.
