4 large Chicken Breast Halves, chopped
3/4 c. Chicken Broth
1/4 c. Soy Sauce
1/2 tsp. Salt
2 Tbls. Cornstarch
2 Tbls. Water
1/4 c. Peanut Oil
2 - 8-oz. cans Water Chestnuts, sliced
2 c. Celery, diagonally sliced

White Rice (for 4)

Cut chicken into 1 inch cubes. Prepare seasoning sauce by combining chicken broth, soy sauce, salt, cornstarch and water. Blend thoroughly and set aside. Add oil to Wok, pouring it around sides; preheat at 314 (about 2 minutes. Add chicken cubes and stir fry 2-3 minutes or until chicken turns white. Add water chestnuts and celery and stir fry about 1-2 minutes. Make well in center. Stir seasoning sauce and add to center of Wok. Bring to boil without stirring. Cook additioonal minute or until thickened, stirring rest of ingredients with sauce. Serve over rice.
