1 lb. powdered sugar
3 oz. cream cheese, softened
peppermint or spearmint extract
food coloring

Directions:
Directions:
Mix powdered sugar into cream cheese until stiff like pie dough. Add coloring and flavoring, if desired, and knead until mixed thoroughly, adding more powdered sugar, if necessary. Roll into small balls and roll in granulated sugar. Press into mint molds. Freezes well.
