4 5 Chicken Breast
2 cans Pineapple Chunks (drained & reserve juice)
1 can Black Olives (drained)
1 Head Celery
1 Bunch of Green Onions
4 Red & Yellow Peppers
5 Oranges
1 Large Bag Chow Mein Noodles


2 cups Real Mayonnaise
3 4 tbsp Curry Powder
1 2 tbsp Prepared Mustard
Juice from Pineapple
Salt & Pepper to taste

1. Grill Chicken breasts until tender & juicy (let cool this can be done the day before & kept in the fridge overnight)
2. Slice meat diagonally into bit size pieces (refrigerate until you are ready for it)
3. Whip together all ingredients for the dressing and let sit in bowl while you prepare the rest of the salad
4. Cut the celery and peppers diagonal into bit sized chunks
5. Cut green onions into small pieces
6. Peel oranges section and slice sections in half
7. Put all ingredients into bowl and add dressing
8. Add Noodles last tossing quickly and serve immediately
