Filling

6 to 8 potatoes boiled in only water then mashed with cup of butter or margarine. Do not add milk.

Add 4 to 6 pounds of grated cheddar cheese. Mix well.


Dough

2 cups flour, teaspoon of salt, one egg and warm water to make a glue. Set aside for hour in warm place.

Making the perogies

Roll out the dough till to inch thickness. Cut out circles approximately in 4 inch circles. Put approximately 1 tablespoon of filling in the center and seal the edges closed. Coat in flour and line them up on a cookie sheet. Then put the cookie sheet in the freezer for about 2 hours. Separate and store in a bag in the freezer.

Cooking the perogies

In a large pot of boiling water with 1 tablespoon of butter in the water, boil the perogies for about 5 to 6 minutes. You can then panfry them in onions and bacon. Serve with sour cream and enjoy.

EXTRA FILLINGS

Sauerkraut Filling

Fry one pound of bacon and one large onion cut into small pieces and mix with a can of sauerkraut. Salt and pepper to taste.

Bacon, Onion and Potato Filling

Fry one pound of bacon and one large onion cut into small pieces and mix into 6 to 8 mashed potatoes with only butter.
