2 c. cooked, mashed sweet potatoes
1/2 c. oleo, softened
2 egg yolks, save whites
1 c. brown sugar
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 c. milk
2 egg whites
1/4 c. sugar
9" unbaked pie shell

Directions:
Directions:
In large bowl mix first 8 ingredients while potatoes are still warm. Add milk. Beat egg whites in small bowl, until stiff, gradually adding 1/4 cup sugar. Fold into potato mixture and pour into pie shell. Bake at 400 F. for 10 minutes, then lower temperature to 350 F., for 45 minutes or until center is set.
