2 lbs. squash
1 small onion, chopped
1/2 cup butter or margarine, melted
1 (10 1/2 oz.) can cream of mushroom soup
1 egg, beaten
12 oz. shredded cheddar cheese
1 tube Ritz crackers, crumbled

Directions:
Directions:
Cook squash and onion, drain.
Combine remaining ingredients thoroughly and pour into well-greased 2 quart oven-proof dish and bake at 350 for 45 minutes.

Variation: Omit the mushroom soup and egg, use only 8 oz. cheese and sprinkle crumbled crackers over top instead of mixing together.
