Approximately 1 lb of beef round or chuck very thinly sliced, 1/4 cup soy sauce, 1 clove garlic, 1 1/2 tsp grated ginger (or 1/2 tsp ground), 1/4 cup salad oil, 1 cup thinly sliced green onion, 1 cup red or green bell pepper cut into small squares, 2 stalks of celery, 1 T cornstarch, 1 cup water, 2 tomatoes cut into wedges, & small can of mushrooms.

Combine soy sauce, garlic, ginger and add to beef and set aside. Heat salad oil in fry pan and add beef mixture and brown (if not tender, cover and simmer 30-40 minutes) turn up heat and add green onion, bell pepper & celery and cook til tender (about 10 minutes). Mix cornstarch with water and add to rest and cook til thickened. Add tomatoes and mushrooms, toss and serve.
