Double pie crust
6 eggs (save 1 yolk to brush on top crust)
1 lb. sausage, cooked and crumbled
4 cups shredded mozzarella cheese
1 or 2 10 oz. packages frozen spinach
2/3 to 1 cup ricotta cheese

Directions:
Directions:
Place bottom pie crust in a deep dish pie pan. Cook spinach in microwave according to package directions and squeeze out excess moisture. Add to all other ingredients and mix thoroughly. Put mixture into pie plate and then cover with second pie crust, sealing the edges. Brush top with saved egg yolk. Bake in a 350 oven for one hour. If making for breakfast, you can bake this the night before for 1/2 hour, then return to oven in the morning for the second half hour of baking. Variation: Top with salsa (after baking, individual pieces).
