6 catfish fillets 1 tsp. salt 1 tsp. black pepper 1 (2 oz.) bottle hot sauce 2 c. self rising cornmeal peanut oil
Sprinkle catfish with salt and pepper. Marinate in hot sauce for at least 2 hours. Place cornmeal in plastic storage bag; drop catfish in one at a time, and shake until completely coated. Fry in deep, hot oil over high heat until fish float to the top and are golden brown. Drain well. Serve hot.
