1 stick butter
1 medium onion
1 c. diced celery
1 1/2 c. shredded cheddar cheese
4 medium yellow squash
4 medium zucchini squash
1 tsp. garlic salt
1 tsp. pepper
1/2 c. parmesan cheese
1/2 butter crackers

Directions:
Directions:
Saute onion and celery in butter. Add to sliced squash. Add garlic salt, pepper, and cheddar cheese and mix well. Top with parmesan cheese and crushed crackers. Pour into casserole dish and bake at 350 for 30 to 40 minutes.

For a healthier version of this recipe, use olive oil in place of the butter, and lowfat cheddar cheese.
