3 boneless chicken breasts
2 c. chicken broth
1 c. red beans, undrained
1 c. salsa
1 c. frozen corn
1/2 c. instant rice
1/3 c. shredded Monterey Jack cheese

Directions:
Directions:

Cut chicken into 1" pieces. Combine chicken, broth, beans, salsa and corn in large pan. Bring to a boil. Reduce heat and simmer uncovered 5-10 minutes. Stir in rice, cover and remove from heat. Let stand 5 minutes. Serve with cheese on top.
