2 cups cubed or shredded chicken
10 oz. bag shredded red cabbage
1 cup sliced cashews
2 cups red grapes
1 bunch of chopped scallions, white part only
2 packages Ramen Oriental Noodles plunged in hot water for 1 minute, then drained.
Dressing:
2 Tbsp rice vinegar
3 Tbsp sugar
- cup oil, part peanut and part hot sesame
salt and pepper to taste
1 package of seasoning mix from Ramen noodles

Mix all ingredients together. Pour dressing over salad about 1 hour before serving.
