1 lb. sausage
3 large potatoes, peeled, thinly sliced
1/2 tsp. salt
1/4 tsp. pepper
3 eggs
1 c. milk
2 T. chives
3/4 tsp. thyme or oregano
pimentos, diced

Directions:
Directions:
In large skillet cook sausage over medium heat, drain. Arrange half the potatoes in greased 8" square baking dish, sprinkle with salt, pepper and 1/2 the sausage. Top with remaining potatoes and sausage, sprinkle with pimentos. In a medium bowl whisk eggs, milk, chives, thyme or oregano; pour over the top. Cover and bake at 375 F. for 45-50 minutes or until potatoes are tender. Uncover, bake 10 minutes longer. Let stand for 10 minutes before cutting.
