INGREDIENTS 4 green bell peppers (I sometimes mix them with yellow peppers) salt & pepper to taste 1-2 pounds ground beef (sometimes I use 1 lb lean beef, 1 lb. ground turkey) 1/3 cup chopped onion or onion flakes 1/3 cup of uncooked dry oatmeal per 1 lb of meat 2-3 medium eggs ½ cup uncooked rice 1 ½ -2 cups water 2 (10.75 ounce) cans condensed tomato soup water as needed
DIRECTIONS 1. Clean and cut the tops off the peppers, cut in half and remove the seeds. Set aside. 2. In a large bowl mix beef, onion, eggs, oats, seasoning, rice. 3. Place meat into halved peppers, rolling the remaining beef into balls and place into the bottom of crock pot. Pour tomato soup and water over peppers. Put crock pot on low and prepare extra rice for dinner. 4. Enjoy
