½ c spicy bulk pork sausage or bacon or turkey bacon
½ to 1/4 c asparagus (you can use broccoli if you prefer)
6 eggs
2 cups milk
1 tsp. dry mustard
5 pieces of bread (Ezekiel or rye is what I use)
1 cup grated sharp cheddar cheese
salt and pepper
other seasons as desired (I use a bit of Cajun).

Cook sausage or bacon and drain (sometimes I use shrimp)
Beat eggs, milk, salt and mustard into a bowl.
Shred your bread into pieces or cube.
Layer bread cubes, then sausage, then fold in cheese into a 9 x 13 baking dish pour mixture on top then sprinkle extra cheese and paprika on top
and refrigerate overnight.

Bake at 350 for 45 minutes. Feeds 6-8 people.

*this is a family tradition for us.* The mess is all over the day before and you just pop it in the oven when you wake up on Christmas morning.
I have substituted extra asparagus when I didn’t use any meats.
You can also double this recipe, use a larger baking dish and keep layering the ingredients.
350º for 1 hour
