4 medium sweet unpeeled potatoes- cut into 2 inch chunks
1/2 tsp salt
Water-just enough to cover the sweet potatoes
1/2 cup of milk
1/3 cup brown sugar
1 tsp cinnamon
2 eggs
1 Tps vanilla

Topping Ingredients:

1/2 cup brown sugar
1/4 cup flour
3/4 cup of chopped pecans
1/3 stick of softened butter





Directions:
Directions:
Boil chunks of sweet potatoes in water just enough to cover sweet potatoes and add salt to water. Boil until sweet potatoes are tender. Drain water and peel skin off of potatoes. Beat with mixer until smooth. Mix all dry ingredients together in a separate bowl and add to potatoes. Beat in eggs one at a time. Add milk slowly and then vanilla. Beat until creamy and smooth. Pour mixture into a 1-2 quart sized baking dish. Now mix all dry ingredients together for the topping except the nuts. Blend in softened butter to the dry ingredients and spread on top of sweet potato mixture. Sprinkle chopped pecans on top and bake on 350 for 1 hour.
