1 1/2 C. Milk, scalded and cooled
2 pkg. Active Dry Yeast
1/2 c. Water, lukewarm
3/4 c. Sugar
1 T. Salt
2 Eggs, beaten
1/2 c. Butter
6 to 7 c. Flour
2 tsp. Cardamom
1 c. Raisins
1 c. Red Candied Cherries, cut in half
1 c. Green Candied Cherries,cut in half
1 c. Candied Pineapple, cut in small wedges

Directions:
Directions:
Dissolve yeast in water. Melt butter in the hot milk; add sugar and salt. When milk is cool, mix in eggs, yeast, cardamom and half the flour. Add raisins, cherries, pineapple. Add remaining flour and knead for 7-8 minutes. Let rise in greased bowl until double in bulk or about 1 hour. Punch down and form 3 loaves. Place in loaf pans and let rise again about 1 hour. Bake 20 minutes at 400. Remove from oven and brush tops with butter.

I obtained this recipe from Rachel Steinsbo. The bright red and green cherries give this a real Christmas appearance. It is also very good toasted.
