1 md. Onion, diced
1 tsp. Olive Oil
2 Garlic Cloves, minced
½ c. Tomato Sauce
2 (15 oz.) cans Pinto Beans, drained and rinsed
1 c. Beef Broth
1 T. Hot Sauce (I use Louisiana Hot Sauce)
¼ tsp. Salt
½ tsp. Ground Cumin
½ tsp. Black Pepper
1 T. Red Wine Vinegar
1 (4 oz.) can chopped Green Chilies (opt.)

Directions:
Directions:
Sauté onion in oil over medium heat until onion is tender but not brown. Add the garlic and sauté for one minute. Stir in tomato sauce, beans, beef broth, hot sauce, cumin, pepper, vinegar and chilies if using. Bring to a boil, reduce heat, and simmer for 8 minutes. Mash the beans until thickened but leave some beans whole.

I usually keep some of this on hand. We use them as dip, for breakfast burritos, or for tacos. Beans are a good way to get your fiber.
