9 oz. jar of sun-dried tomatoes in oil
1 lb. chicken breast fillets, cut into thin strips
2 cloves garlic, crushed
1/2 cup cream
2 tbsp. shredded basil
13 oz. penne pasta, cooked
2 tbsp. pine nuts, toasted

Directions:
Directions:
Drain the sun-dried tomatoes, reserving the oil. Thinly slice the sun-dried tomatoes.

Heat a wok until very hot, add 1 tbsp. of the oil reserved from the sun-dried tomatoes and swirl it around to coat the side. Stir-fry the chicken strips in batches, adding more oil when necessary.

Return all the chicken strips to the wok and add the garlic, sun-dried tomatoes and cream. Simmer gently for 4-5 minutes.

Stir in the basil and pasta and cook until heated through. Season well. Serve with the toasted pine nuts.
