1 egg, beaten
1 c. buttermilk
1/2 c. finely chopped onion
1/4 c. water
1 3/4 c. cornmeal
1/2 c. all purpose flour
1 tbsp. sugar
2 tsps. baking powder
1 tsp. salt
1/2 tsp. baking soda
Oil for deep frying

Directions:
Directions:
In deep pan heat oil to 375.

Blend egg, buttermilk, onion and water; set aside. Combine cornmeal, flour, sugar, baking powder, salt, and soda. Add egg mixture to cornmeal mixture; stir just to moisten.
Drop batter by tablespoonfuls into hot oil-do not overcrowd them in pan. Fry about 2 minutes, turning once. Drain on paper towel.

Makes about 24.
