1 1/2 c sweetened flaked coconut
1 1/4 c all purpose flour
3/4 c packed light brown sugar
1/4 c sugar
1/2 tsp salt
1 1/2 sticks cold butter, cut into pieces
1 1/2 c old fashioned rolled oats
3/4 c seedless raspberry jam

375 oven.

Butter a 9 x 13" metal baking pan.

Spread 3/4 c coconut evenly on a baking sheet and toast in the oven, stirring once, until golden, about 8 minutes. Cool.

Combine flour, brown sugar, sugar and salt in a food processor. Add butter and process until dough begins to form. Transfer the dough to a bowl and mix in the oats and toasted coconut until well combined.

Reserve 3/4 c of dough, then press remainder evenly into the bottom of the prepared pan. spread jam over top. Crumble the reserved dough evenly over the ham, then sprinkle with the remaining 3/4 c untoasted coconut.

Bake in the center of the oven until golden, 20-25 minutes. Place pan on a rack and let cool completely. Loosen from sides of pan, then lift out in one piece, transferring to a cutting board. Cut into 24 bars.
